Weekday Warm Up for Chilly Winter Days: A Delicious Mushroom Stew Recipe you will LOVE!
I don’t know about you, but when the weather is nasty and cold, I want something hearty and warm for dinner. Enter this FANTASTIC recipe from Pampered Chef, with a Toni twist. The original recipe is vegetarian friendly, but since the hubby and I are carnivores, I added ground beef to the mix for an alternative version. You could also sub in chicken or pork if you are so inclined. The biggest win for this recipe? I had EVERYTHING I needed on hand and I bet you do too!
A little back story…
I’ve been ordering from Imperfect Foods (click here to give it a test run for yourself!) for a while now and discovered that even with my deliveries coming every other week, I have a LOT of vegetables that need to be consumed. Not so hard to do if you have kids at home or guests on the way, but when it’s just two of you, it’s a bit harder to work our way through all that fresh veggie goodness. So…when I get fed (literally) a recipe that I can use to plow my way through a crisper full of produce, who am I to argue? This recipe dropped into my inbox thanks to no less than 3 different Pampered Chef ladies. Yes, I said three different ladies. Two of them, are near and dear to my heart but the third? Well, that’s another story all together, and I think the title is “Sure, I’ll help you make your party goal!” Oy Vey. But, I digress. This recipe, like so many Pampered Chef recipes is easy to put together and oh so tasty. Also, did I happen to mention the crisper full of veggies? Mine was quite literally, overflowing and I had those beautiful mushrooms that were just crying out to be made into something fabulous. The other, less obvious, perk of this recipe is the low calorie count and the fact that it really fit the bill yesterday when it was blustery cold out and my energy level for figuring out what to make for dinner was pretty dismal. Lucky for me I actually checked my email!
As you might expect, I had to tweak the recipe just a tad because I did not have mushroom broth on hand and as I mentioned before, the hubby and I are carnivores so I wanted some meat in there. The ground beef I had fit that bill nicely and was an easy addition. You could absolutely add chicken or pork or stew meat instead if you wanted to. Really, you could put pretty much whatever you want in there, and in hindsight, I realized that I should have chopped up some celery. Ah well…there’s always next time!
