don’t know about you, but when the weather is nasty and cold, I want something hearty and warm for dinner. Enter this FANTASTIC recipe from Pampered Chef. With a Toni twist. The original recipe is vegetarian friendly, but since the hubby and I are carnivores, I added ground beef to the mix for an alternative version. The biggest win for this recipe? I had EVERYTHING I needed on hand. I bet you do too!

I really love the artisanal or rustic loaves with the crunchy tops and the flour-dusted bottoms. These loaves tend to be a bit more (ok a LOT more) dense than the Wonder White Bread you find in the grocery store, but they are SO good. Plus, they make for really tasty sandwiches along side a bowl of piping hot soup. YUM

I’ve been making these easy breakfast-in-a-bowl meals for a while now and still think they’re genius. Who likes a lot of fuss in the morning? Not me, that’s for darned sure. The only thing I really want to worry about when I get up in the morning is whether my favorite coffee mug is clean and there’s coffee ready. This working from home thing has its perks, but I’ve also lost some of my prior enthusiasm for getting up early and seizing the day.  Heck there are days when the cup of coffee in my hands is the only thing keeping me moving toward my office chair. 

Enter the easiest hot breakfast you will ever make. No, really. EASIEST. EVER. Heck, even your 5 year old could make this. Teach them how to do it and then see what happens on Mother’s Day when they bring you breakfast in bed! Hmmm. You probably want to teach your partner/spouse too so they can ensure that little fantasy happens…

All you/they have to do is gather together a few simple ingredients (there are only 4 unless you add stuff or count the salt and pepper), toss them in a microwave-friendly bowl, stir, microwave for 3-4 minutes, let it rest for a minute and eat. See?!? I told you it was easy, and on a chilly morning, or a sunny morning, or a rainy morning, or a meetings-all-day-morning, it’s the perfect thing to get your day off to a good start.

Of course you can swap out the ingredients if you don’t care for ham, or don’t have cheddar cheese on hand, or want to add in some onion or peppers. Really, you can toss in whatever you would like and make it your own. Adjust your cook time as needed to accommodate any additional ingredients or for larger quantities and, finally, be patient and let it rest just a bit before you dig in. The bowl can be a mite toasty and it you aren’t careful you’ll burn your fingers and your tongue. Insert sad, sympathetic face here.

Yield: 1 serving

Easy Breakfast in a Bowl

Prep Time: 5 minutes
Cook Time: 3 minutes
Additional Time: 1 minute
Total Time: 1 minute

Quick, easy and delicious. When you're hungry for something hearty for breakfast but don't have a lot of time to spare, make this your go-to.

Ingredients

  • 2 eggs
  • Splash of water
  • 1/4 cup shredded cheese (cheddar, parmesan or whatever you have on hand)
  • 1/2 cup shredded hashbrowns
  • 1/4 cup diced ham
  • opt: 2 Tbls chopped green or red pepper
  • salt & pepper to taste

Instructions

Spray a microwave-safe bowl (one that's a little deeper works best) with cooking spray

Crack two eggs into the bowl and add a splash of water.

Whisk with a fork until slightly frothy

Add cheese, ham, hashbrowns and peppers if you choose to add those.

Add a dash of pepper and salt, and then give it all a stir.

Pop in the microwave (cover with a paper towel to prevent splatters), and cook on high for 2 minutes. Stir and cook for 30 seconds to a minute more until eggs are cooked to the consistency that you like.

Let cool for a minute before eating. Enjoy!

Notes

Really, you can toss whatever you want into the bowl. i like to add a little onion if i have it (green or yellow), peppers and sometimes a little bit of Mrs. Dash seasoning.

Hungry for Pasta? Whip up some Sweet Italian Fussilloni!

Have you ever had one of those weeks where the thought of cooking after a long day at work just felt like well… work? I’m having one of those weeks, so when I was doing a mad dash through Target the other day I stumbled on a new pasta variety that I thought looked good. Really, anything that will hold onto the sauce and whatever else I toss into my pasta dishes, is appealing to me. I’d never seen Fussilloni before (or heard of it for that matter) so I tossed it in my cart along with a jar of basil and garlic pasta sauce and went on my way. It looks a lot like rotini but it’s quite a bit larger and I figured it would work for dinner one day this week .

Skip ahead a day or two to Thursday night when I drummed up some cooking mojo and started pulling stuff together for this Sweet Italian Fussilloni Recipe. My subscription to Imperfect Foods pretty much guarantees that I always have bell peppers on hand and I also had a package of sweet Italian sausage and some mushrooms in my last box. All that paired with half an onion and I was well on my way to a quick dinner. Putting it together took less than 30 minutes including the time it took to toss a loaf of sourdough in the oven to warm. As an added bonus, we have leftovers for a day or two! It pairs nicely with a fresh, tossed salad.

A Company of Friends Egg Bake

This weekend, we’re entertaining some friends and having a great time doing it. I get to dust off my hostess skills (a bit rusty after a year plus of not being able to) and my husband has someone to distract him from work and all the family stuff we’ve been dealing with of late. It’s a welcome reprieve actually and one we feel blessed to be able to enjoy.

Yesterday, I whipped up one of my easier breakfast bakes that, until this morning when I created the recipe file for this post, didn’t really exist on paper. I’d made this once before with good results so, when yesterday’s attempt turned out just as good, I decided to call it a recipe and share it with all of you – just in time for the weekend!

What I love about this egg bake is that it is EASY and fast to assemble. Start to finish it’s ready in an hour and dare I say, delicious. When I am entertaining the last thing I want to do is spend all my time in the kitchen when there’s a cup of coffee and a morning on our deck waiting.

I garnished the finished egg bake with fresh sliced Roma tomato and a sprig of basil from my basil plant and then served it up with a pretty. platter of fresh fruit. I’m happy to report our guests loved it.

This recipe is easily adapted if there are ingredients that you don’t care for so feel free to experiment. I used my convection setting on my oven to bake it which helped to give me that golden brown, slightly crispy edge. With that said, you do not need a convection oven to make this. Just bake a tad longer if needed and cover it if it starts to brown before the center is set.
